What’s not to love about the good old spud? It is a staple in most households and can provide good, nutritious food in so many forms. The Maris Piper is a firm family favourite and cheap, which makes it an ideal mention on a money saving blog.
Mondays is our busy busy evening with school clubs that me and the children need a quick turnaround tea before Dyl heads back out to football training.
Therefore I usually prepare Dylan’s favourite during the day and then it just needs a heat through. Dylan’s favourite then is a very cheap and filling tea. I simply pop a Maris Piper in the oven for each of them for 50 minutes. Secondly I grate a plie of cheese , chop up some spring onion and rip up some ham.
Then I cut each jacket Potato in ha;f, scoop out the fluffy potato and mix / mash it with the ham and cheese combo.
Then I pop spoonfuls of the mixture back into the Jacket skins and then pop back in the oven for another 10 mins.
These can be served with salad or as Dylan prefers with baked beans. However they are filling on their own. These also freeze well and are therefore great for a working mums freezer back up.
