Easy Strawberry Cheesecake Popsicles For Summer Time

My children really enjoy yummy popsicles and frozen treats after playing outside in the summer sun. Now that the weather is turning warmer it is time to look at homemade cheap and frugal icecream alternatives. These Easy Strawberry Cheesecake Popsicles For Summer Time are cheap to make but delicious at the same time.  It is a treat that you can always have ready in the freezer.
By adding in some summer berries you are also sneaking in some goodness to their after-school treat. You could mix up the berries for an alternative and try different flavours based on your favourite seasonal fruit.
Ingredients:
1 cup of digestive biscuits or graham crackers (crushed)
4 Tbsp of melted butter
1, 8 oz. package of cream cheese
2 cups of strawberries (halved or quartered)
1/2 cup of powdered sugar
1/3 cup of milk
1/4 cup of strawberry cheesecake or vanilla yoghurt
Directions:
1. In a bowl, thoroughly combine the crushed graham cracker and melted butter. Set aside. 
2. In a food processor or mixer, combine the cream cheese, strawberries, powdered sugar, milk, and yoghurt. Mix into a smooth texture. 
3. Fold HALF of the graham cracker mixture into the popsicle filling.
4. Spoon the popsicle filling into popsicle molds, leaving some room at the top/base for graham cracker crust.
5. Spoon the remaining graham cracker mixture into the popsicle molds, firmly pressing into place.
6. Freeze and enjoy!
