Making lunchboxes is often part of the parenting regime, come the evening I find myself making sandwiches and the children complaining we have no decent food in the house. Sandwiches are put together for the husband and for the children. However I am really bad at being quite so prepared myself. I don’t like sandwiches and never have and therefore my own lunchboxes as a child consisted of cream crackers that had gone soft with the butter or crossiants. Over the years my lunchboxes have not got much more appetising – until now.
Over recent months I had got into the naughty, expensive and often unhealthy regime of eating shop bought pasta salads. At the same time I could feel the waistbands of my clothes pulling tighter. Then my lovely friend Jane from Northern Mum introduced me to the paleo approach. I am totally in awe of her transformation both in how she looks and feels. I am taking some advice from her I am cutting out wheat, gluten, potatoes and generally trying to eat more naturally. I haven’t cut out all sugars and diary I am not that hardcore but I am already feeling lighter and that’s in my pocket too!
I am now making myself a healthy salad for lunch and it is saving me money every day. I am taking ten minutes in an evening to look after myself as well as looking after the children and husbands stomachs! Tomorrows lunch will be an egg salad. Not shop bought so it contains no hidden extras.
The paleo approach is saving my waistline and my money – all good so far! I have also made chicken salads and prawn. A simple change from buying food on the go to just being more prepared makes so much sense.
